Taste the Difference: The Science of Fruit Flavor

We will tour the Cornell Orchards to see how apples, grapes, strawberries, raspberries, cranberries, blueberries, and kiwifruit are grown. You’ll pick and savor some of these at their peak of ripeness right off the tree, vine or bush. Then you will use a pH meter, refractometer, pressure tester and color meter to evaluate several apple varieties. You will learn how these variables measure fruit quality and are used to identify promising new and flavorful fruit varieties for the commercial market.
